Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a large baking dish with nonstick cooking spray.
- In a bowl, whisk together minced garlic, lemon juice, olive oil, salt, and pepper.
- Add chicken breasts to the marinade; drizzle with pan juices for extra flavor.
- Place halved baby potatoes around the chicken in the baking dish.
- Sprinkle with fresh herbs.
- Bake in the preheated oven for 25-30 minutes or until chicken is cooked through.
Notes
