- 1 large crisp apple (e.g., Granny Smith), cored and sliced
- 1/2 cup dried cranberries
- 1/4 cup sunflower seeds
- 1/2 cup plain Greek yogurt
- 2 tbsp honey
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Wash and dry the broccoli, then cut it into bite-sized florets.
- Core and slice the apple into thin pieces, leaving the skin on for added color.
- In a large bowl, combine broccoli florets, apple slices, dried cranberries, and sunflower seeds.
- In a separate small bowl, whisk together Greek yogurt, honey, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the salad mixture and toss gently until everything is well coated.
- Serve immediately or chill in the refrigerator for about 30 minutes before serving.
Notes
- For added crunch, consider using toasted sunflower seeds.
