  • Pinch of salt

Instructions

  1. Prepare the Ganache: Begin by placing the finely chopped white chocolate in a heatproof bowl. The finer the chop, the smoother your truffle centers will be. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer — not boil. Once hot, immediately pour it over the white chocolate. Let it sit undisturbed for one minute to gently melt the chocolate.
  2. Stir Until Smooth: Using a whisk or spatula, stir the cream and chocolate together until completely smooth and glossy. If there are any stubborn bits, microwave the mixture for 5–10 seconds and stir again. Stir in the vanilla extract and a small pinch of salt to enhance the flavor.
  3. Chill the Mixture: Cover the bowl and refrigerate the ganache for about 2 hours, or until firm enough to scoop. Don’t rush this step — the chilled texture is key to forming perfect truffles.
  4. Scoop and Shape: Using a small cookie scoop or teaspoon, portion out the ganache and roll it into balls between your palms. Don’t worry if they’re not perfectly round — the charm is in their handmade look.
  5. Roll in Coating: Roll the truffles in your favorite coating — we love shredded coconut for a snowy look, but powdered sugar, white sprinkles, or crushed freeze-dried berries also add beautiful color and texture.
  6. Chill Again (Optional): If your hands warmed the truffles too much during rolling, refrigerate them briefly before serving to firm them back up.
