Ingredients

- 1 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 1 tablespoon granulated sugar
- 1 ¼ cups buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoons melted butter (or oil)
- Butter or oil for greasing the skillet
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, and sugar.
- In another bowl, whisk the eggs, then add buttermilk, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry and stir gently until just combined; don’t overmix.
- Preheat a non-stick skillet or griddle over medium heat and grease lightly.
- Scoop about ¼ cup of batter for each pancake onto the skillet.
- Cook until bubbles appear and edges look dry, then flip and cook until golden.
- Serve warm with your favorite toppings.
Notes
- These pancakes can be made ahead and frozen for quick breakfasts!
- Feel free to add chocolate chips or berries to the batter for extra flavor.
