Description

Delicious fluffy pancakes perfect for breakfast or a weekend brunch.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 ¼ cups buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter (or oil)
  • Butter or oil for greasing the skillet

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, and sugar.
  2. In another bowl, whisk the eggs, then add buttermilk, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry and stir gently until just combined; don’t overmix.
  4. Preheat a non-stick skillet or griddle over medium heat and grease lightly.
  5. Scoop about ¼ cup of batter for each pancake onto the skillet.
  6. Cook until bubbles appear and edges look dry, then flip and cook until golden.
  7. Serve warm with your favorite toppings.

Notes

  • These pancakes can be made ahead and frozen for quick breakfasts!
  • Feel free to add chocolate chips or berries to the batter for extra flavor.
