A delicious roast turkey recipe perfect for Thanksgiving or any special occasion.
Ingredients

- 1 whole turkey (12–14 pounds)
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 6 garlic cloves, crushed
- 1 lemon, halved
- 4 carrots, chopped
- 2 onions, quartered
- 3 potatoes, cubed
- 2 cups low-sodium chicken broth
Instructions
- Preheat your oven to 325°F (165°C).
- Rinse the turkey under cold water and pat it dry. Coat generously with olive oil and season inside and out with salt, pepper, rosemary, and thyme.
- Stuff the cavity with halved lemons and crushed garlic.
- Arrange chopped carrots, onions, and potatoes around the turkey in a roasting pan. Drizzle lightly with olive oil and season.
- Roast for approximately 3 hours or until the internal temperature reaches 165°F (74°C), basting occasionally.
- Let the turkey rest for at least 20 minutes before carving.
Notes
- This turkey pairs well with stuffing and cranberry sauce.
- Keep the turkey covered with foil during the first half of roasting to prevent over-browning.
- Use the drippings to make gravy.
