Description

A delicious roast turkey recipe perfect for Thanksgiving or any special occasion.

Ingredients

Scale
  • 1 whole turkey (1214 pounds)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 6 garlic cloves, crushed
  • 1 lemon, halved
  • 4 carrots, chopped
  • 2 onions, quartered
  • 3 potatoes, cubed
  • 2 cups low-sodium chicken broth

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Rinse the turkey under cold water and pat it dry. Coat generously with olive oil and season inside and out with salt, pepper, rosemary, and thyme.
  3. Stuff the cavity with halved lemons and crushed garlic.
  4. Arrange chopped carrots, onions, and potatoes around the turkey in a roasting pan. Drizzle lightly with olive oil and season.
  5. Roast for approximately 3 hours or until the internal temperature reaches 165°F (74°C), basting occasionally.
  6. Let the turkey rest for at least 20 minutes before carving.

Notes

  • This turkey pairs well with stuffing and cranberry sauce.
  • Keep the turkey covered with foil during the first half of roasting to prevent over-browning.
  • Use the drippings to make gravy.
