- 2 lbs Russet potatoes (peeled and chopped)
- 4 tbsp unsalted butter
- 1 cup heavy cream
- 2 cloves garlic (minced or roasted)

- 2 tbsp chives or parsley (chopped)
Instructions
- Peel and chop the russet potatoes into even chunks.
- Place them in a large pot filled with cold water and season generously with salt.
- Bring to a boil over medium-high heat, then simmer until fork-tender (about 15-20 minutes).
- Drain the potatoes and return them to the pot over low heat for 1-2 minutes to evaporate excess moisture.
- Add butter and heavy cream; mash until smooth and creamy.
- Season with salt and pepper to taste. Mix in roasted garlic if desired.
- Serve warm, garnished with additional butter or herbs.
