Description

A delicious creamy chicken rigatoni dish that combines tender chicken with a rich and flavorful sauce.


Ingredients

  • 2 boneless skinless chicken breasts
  • 3 tablespoons olive oil, divided
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 ounces rigatoni pasta, cooked al dente
  • 4 tablespoons unsalted butter
  • ¼ cup shallot, finely diced
  • ¼ cup sun-dried tomatoes, softened in hot water and chopped
  • 1 teaspoon garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon oregano
  • 1 ½ cups heavy cream
  • 1 ½ cups milk
  • 1 cup fresh spinach
  • 1 cup Parmesan cheese, grated (plus more for garnish)
  • 1 cup cherry tomatoes, halved
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Pat the chicken breasts dry, season with paprika, garlic powder, salt, and pepper, and sear for 5-7 minutes on each side until golden brown. Transfer to a plate to rest.
  2. In the same skillet, add the remaining 1 tablespoon of olive oil and butter. Sauté the shallots for 2-3 minutes until soft. Add the minced garlic and sauté for 1 more minute.
  3. Stir in the sun-dried tomatoes, tomato paste, oregano, and additional spices. Cook for about 2 minutes.
  4. Pour in the heavy cream and milk, simmering gently for about 5 minutes until thickened.
  5. Add the cooked rigatoni, spinach, and Parmesan, tossing until well coated.
  6. Slice the chicken and serve on top of the pasta, garnished with additional Parmesan and parsley.
