Description

A delicious twist on traditional burgers with cheesy tortillas and a spicy chipotle mayo.


Ingredients

  • 1 ¼ pounds ground beef
  • ¾ teaspoon salt
  • ½ cup mayonnaise
  • 1 tablespoon chipotles in adobo, minced
  • 2 teaspoons lime juice
  • 2 tablespoons butter
  • 8 small flour tortillas
  • 1 ½ cups Colby Jack cheese, shredded
  • 1 cup pico de gallo
  • ½ cup shredded lettuce

Instructions

  1. Preheat a grill to medium heat.
  2. In a large bowl, gently combine the ground beef and salt. Form the mixture into 4 equal patties.
  3. Grill the patties for 3-4 minutes per side, or until they reach your desired level of doneness.
  4. While the burgers cook, stir together the mayonnaise, minced chipotles in adobo, and lime juice in a small bowl. Set aside.
  5. Melt 1 tablespoon of butter in a large skillet or on an electric griddle over medium heat. Place 4 tortillas in the skillet and top each evenly with half of the Colby Jack cheese. Place a grilled burger patty on top of each cheese-topped tortilla.
  6. Spread a spoonful of the chipotle mayo mixture over each burger patty. Then, divide the pico de gallo and shredded lettuce evenly among the burgers.
  7. Once the cheese on the tortillas has fully melted, carefully remove the burger-topped tortillas from the skillet and set aside.
  8. Melt the remaining 1 tablespoon of butter in the same skillet. Add the remaining 4 tortillas and top them with the rest of the shredded cheese. Cook until the cheese is melted and the bottom of the tortillas is golden brown and crispy.
  9. Place these cheesy tortillas on top of the burgers, cheese-side down, to complete the quesadilla burgers. Serve immediately.

Notes

  • This recipe can be served with additional toppings like sliced jalapeños or avocado.
  • Make sure not to overcook the burgers to retain juiciness.
