Description

Delicious and healthy High Protein Blueberry Cake Donuts perfect for any time of the day.

Ingredients

Scale
  • 1 ½ cups whole wheat flour
  • ½ cup vanilla protein powder
  • ½ cup granulated sweetener (like coconut sugar or erythritol)
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • ½ cup almond milk (or any milk of choice)

Instructions

  1. Start by preheating your oven to 350°F (175°C). Prepare a donut pan by greasing it lightly or using cooking spray.
  2. In a large mixing bowl, combine whole wheat flour, protein powder, granulated sweetener, baking powder, baking soda, and salt. Stir until evenly mixed.
  3. In another bowl, whisk together the applesauce, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries, being cautious not to crush them.
  6. Carefully spoon the batter into the prepared donut pan, filling each cavity about three-quarters full.
  7. Place the donut pan in the oven and bake for 12-15 minutes or until the donuts are golden and a toothpick inserted in the center comes out clean.
  8. Remove the pan from the oven and allow the donuts to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
  9. If desired, drizzle with a simple glaze made from powdered sweetener and almond milk for extra sweetness.
  10. Serve and enjoy your delicious High Protein Blueberry Cake Donuts fresh, or store them in an airtight container for later.

Notes

  • These donuts can be stored in an airtight container for several days.
