- 2 large sweet potatoes, peeled and cut into thin fries
- 2 tablespoons olive oil
- 1 teaspoon cornstarch
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: chopped fresh parsley for garnish
Instructions
- Prep Your Sweet Potatoes: Start by peeling the sweet potatoes and cutting them into even matchstick-sized pieces, about ¼-inch thick. Try to keep the size consistent for even cooking.
- Soak for Crispiness (Optional but Recommended): For an extra crispy result, soak the fries in cold water for at least 30 minutes. This step removes excess starch. After soaking, drain and dry thoroughly with a clean towel. Moisture is the enemy of crispiness!
- Coat with Cornstarch and Spices: In a large bowl, toss the sweet potato fries with cornstarch first. This creates a light coating that helps them crisp in the oven. Then, drizzle in the olive oil and sprinkle in paprika, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
- Arrange on a Baking Sheet: Line a baking sheet with parchment paper. Spread the fries out in a single layer, making sure they’re not touching. Overcrowding leads to sogginess, so use two trays if necessary.
- Bake at High Heat: Bake in a preheated oven at 425°F (220°C) for 15 minutes. Flip each fry carefully with tongs, then bake for another 10-15 minutes, or until golden and crispy on the edges.
- Serve Immediately: Once baked, sprinkle with a little more salt if desired and garnish with fresh parsley. Serve hot with your favorite dipping sauce — I’m partial to garlic aioli or a smoky chipotle mayo.
