Description

A hearty Italian sausage lasagna soup that’s easy to make and full of flavor.


Ingredients

Scale
  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 28-ounce can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 ounces lasagna noodles, broken into pieces
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)

Instructions

  1. In a large pot over medium heat, add olive oil and the Italian sausage. Cook until browned.
  2. Add onion and bell pepper; sauté for about 5 minutes. Stir in garlic for another minute.
  3. Pour in crushed tomatoes and broth; season with oregano, basil, salt, and pepper. Bring to a boil.
  4. Add lasagna noodles; reduce heat and simmer for 10-12 minutes until tender.
  5. Remove from heat and stir in ricotta cheese followed by mozzarella and Parmesan until melted.
  6. Serve hot with optional fresh basil garnish.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Leftovers can be frozen but may require additional broth when reheating.
