- 1 teaspoon Bicarbonate of Soda (Baking powder can be used interchangeably, but adjust as necessary.)
- 1 teaspoon Baking Powder (Ensure it’s fresh for effectiveness.)
- 1/2 teaspoon Salt (Sea salt adds a unique touch.)
- 2 tablespoons Lemon Juice (Vinegar can be used as a substitute.)
Instructions
- Start by selecting LOW HEAT and pre-heating your slow cooker.
- Combine sugar in the slow cooker and cook for about 15 minutes, stirring occasionally, until it beautifully caramelizes.
- In a saucepan, heat the cream until just below boiling and mix it into the caramelized sugar.
- Stir in the chopped walnuts and a pinch of salt into the caramel mixture.
- In a separate bowl, puree the ripe bananas. Mix them with the sugar, canola oil, and eggs until combined and smooth.
- Sift the all-purpose flour, bicarbonate of soda, baking powder, and salt into the banana mixture. Gently fold together until just combined.
- Add a splash of lemon juice to the batter and mix lightly.
- Carefully pour the cake batter over the caramel walnut mixture in the slow cooker.
- Switch your slow cooker to HIGH and set the timer for 45 minutes.
- After 45 minutes, test the cake for doneness using a skewer. If it comes out clean, it’s ready.
- Carefully invert the cake onto a serving tray to reveal the gooey caramel and walnut topping.
