Instructions

  1. Start by selecting LOW HEAT and pre-heating your slow cooker.
  2. Combine sugar in the slow cooker and cook for about 15 minutes, stirring occasionally, until it beautifully caramelizes.
  3. In a saucepan, heat the cream until just below boiling and mix it into the caramelized sugar.
  4. Stir in the chopped walnuts and a pinch of salt into the caramel mixture.
  5. In a separate bowl, puree the ripe bananas. Mix them with the sugar, canola oil, and eggs until combined and smooth.
  6. Sift the all-purpose flour, bicarbonate of soda, baking powder, and salt into the banana mixture. Gently fold together until just combined.
  7. Add a splash of lemon juice to the batter and mix lightly.
  8. Carefully pour the cake batter over the caramel walnut mixture in the slow cooker.
  9. Switch your slow cooker to HIGH and set the timer for 45 minutes.
  10. After 45 minutes, test the cake for doneness using a skewer. If it comes out clean, it’s ready.
  11. Carefully invert the cake onto a serving tray to reveal the gooey caramel and walnut topping.
