Delicious pumpkin spice macarons filled with a creamy butter and cream cheese mixture.
Ingredients

- 1 cup almond flour
- 1 cup icing sugar
- 2 large egg whites (aged)
- 1/4 cup granulated sugar
- 2 tsp pumpkin spice mix
- 1–2 drops orange gel food coloring
- 1/2 cup unsalted butter (softened)
- 1 cup powdered sugar
- 4 oz cream cheese (softened)
Instructions
- Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
- Whisk together almond flour, icing sugar, and pumpkin spice mix in a bowl.
- In a clean bowl, whip egg whites until frothy; gradually add granulated sugar until stiff peaks form.
- Gently fold dry ingredients into meringue; add food coloring as desired.
- Pipe small circles on prepared sheets; cool completely before filling with butter and cream cheese mixture.
Notes
- Aging egg whites helps create a better meringue.
- Make sure all utensils are clean and dry when making meringue.
