Description

Ingredients

  • 1 cup icing sugar
  • 2 large egg whites (aged)
  • 1/4 cup granulated sugar
  • 2 tsp pumpkin spice mix
  • 12 drops orange gel food coloring
  • 1/2 cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 4 oz cream cheese (softened)

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Whisk together almond flour, icing sugar, and pumpkin spice mix in a bowl.
  3. In a clean bowl, whip egg whites until frothy; gradually add granulated sugar until stiff peaks form.
  4. Gently fold dry ingredients into meringue; add food coloring as desired.
  5. Pipe small circles on prepared sheets; cool completely before filling with butter and cream cheese mixture.

Notes

  • Aging egg whites helps create a better meringue.
