- 4 skin-on salmon fillets (4–6 oz each)
- 1 cup unsalted roasted pistachios
- 1/2 cup fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- 3 cloves garlic, minced
- Zest of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a food processor, combine pistachios, parsley, dill, garlic, lemon zest, salt, and pepper. Pulse until finely chopped.
- Place the salmon fillets on a parchment-lined baking sheet. Drizzle with olive oil and season lightly with salt and pepper.
- Generously spoon the pistachio mixture over each fillet and press down gently.
- Bake for 12-15 minutes until the salmon flakes easily with a fork and the crust is golden brown.
- Let rest for one minute before serving.
