Deliciously soft cookies filled with rich chocolate Rolos.
Ingredients

- 1 cup unsulfured molasses
- 1 cup light brown sugar
- ½ cup unsalted butter, softened
- 2 cups all-purpose flour
- 2 large eggs (room temperature)
- 1 tsp baking soda
- ¼ tsp salt
- 12 Rolos (one per cookie)
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, cream together the butter and brown sugar until fluffy (about 3 minutes).
- Mix in molasses and eggs one at a time until well combined.
- In another bowl, whisk together flour, baking soda, and salt; gradually add to wet ingredients.
- Scoop tablespoon-sized portions of dough into muffin cups, creating an indentation in each for a Rolo.
- Place a Rolo in each cup and bake for 10-12 minutes until edges are golden brown.
- Allow to cool slightly before removing from the tin.
Notes
- For best results, use room temperature eggs to ensure proper mixing.
- Store cookies in an airtight container to keep them soft.
