- 1 cup pineapple juice
- 1 tbsp cornstarch mixed with 2 tbsp water

Instructions
- Prepare the chicken by patting the thighs dry.
- In a bowl, whisk together soy sauce, brown sugar, pineapple juice, garlic, ginger, rice vinegar, and sesame oil to create the marinade.
- Marinate the chicken in the mixture for at least one hour or overnight for deeper flavor.
- Preheat your grill or skillet over medium-high heat.
- Grill each thigh for about 5-7 minutes per side until golden brown and fully cooked.
- In a saucepan, bring reserved marinade to a gentle boil.
- Stir in cornstarch mix until thickened.
- Brush thickened glaze over the chicken during the last minute of cooking.
- Serve garnished with chopped green onions alongside steamed rice or salad.
