- 8 slices Thick White Bread (Brioche can be used for a more decadent option.)
- 2 tbsp Butter (Substitute with oil for a dairy-free option.)
- 1 cup Strawberries (Fresh, sliced.)
- 1 cup Blueberries (Fresh.)
Instructions
- Preheat your oven to 120°C (100°C fan-forced).
- Whisk together the eggs, milk, caster sugar, and vanilla extract in a medium shallow dish.
- Grease a large non-stick frying pan with butter and melt it over medium heat.
- Dip two slices of thick white bread in the egg mixture for about 15-20 seconds on each side.
- Cook the soaked bread in the pan for 2-3 minutes on each side until light golden brown.
- Transfer the cooked French toast to a tray and keep it warm in the oven.
- Repeat with the remaining bread and egg mixture, adding more butter as needed.
- Serve warm topped with strawberries and blueberries, and dusted with icing sugar.
