  • 1 tsp Vanilla Extract (Use pure extract for the best taste.)
  • 8 slices Thick White Bread (Brioche can be used for a more decadent option.)
  • 2 tbsp Butter (Substitute with oil for a dairy-free option.)
  • 1 cup Strawberries (Fresh, sliced.)
  • 1 cup Blueberries (Fresh.)

Instructions

  1. Preheat your oven to 120°C (100°C fan-forced).
  2. Whisk together the eggs, milk, caster sugar, and vanilla extract in a medium shallow dish.
  3. Grease a large non-stick frying pan with butter and melt it over medium heat.
  4. Dip two slices of thick white bread in the egg mixture for about 15-20 seconds on each side.
  5. Cook the soaked bread in the pan for 2-3 minutes on each side until light golden brown.
  6. Transfer the cooked French toast to a tray and keep it warm in the oven.
  7. Repeat with the remaining bread and egg mixture, adding more butter as needed.
  8. Serve warm topped with strawberries and blueberries, and dusted with icing sugar.
