Ingredients

  • 12 oz fresh cranberries
  • 1 medium onion (finely diced)
  • 1/3 cup apple cider vinegar
  • 1/2 cup light brown sugar
  • 1 tbsp fresh ginger (grated)
  • 1 cinnamon stick
  • 1 tbsp olive oil
  • Pinch of salt

Instructions

  1. Rinse cranberries under cold water and remove any soft ones.
  2. In a medium saucepan over medium heat, heat olive oil and sauté the diced onion until translucent (about 5 minutes).
  3. Stir in cranberries, brown sugar, apple cider vinegar, ginger, and the cinnamon stick.
  4. Bring to a gentle boil, stirring occasionally.
  5. Simmer uncovered until cranberries burst and mixture thickens (approximately 15 minutes).
  6. Taste and adjust seasoning if necessary.
  7. Remove from heat and discard the cinnamon stick.
  8. Allow chutney to cool before transferring to an airtight container.
  9. Chill for at least one hour before serving.
