These honey glazed carrots are a delicious side dish that are easy to prepare in the Instant Pot.

- 1 pound carrots, peeled and cut into 1-inch pieces
- 1/4 cup vegetable broth
- 2 tablespoons butter
- 2 tablespoons honey
- 1 tablespoon brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Place the carrots and vegetable broth in the Instant Pot.
- Secure the lid and set the valve to sealing.
- Cook on high pressure for 3 minutes.
- Quick-release the pressure.
- Carefully open the lid.
- Drain any remaining liquid from the Instant Pot.
- Add the butter, honey, brown sugar, cinnamon, salt, and pepper to the Instant Pot.
- Stir gently to coat the carrots with the glaze.
- Turn on the sauté function and cook for 2-3 minutes, or until the glaze has thickened and is glossy, stirring occasionally.
- Transfer the carrots to a serving dish.
- Garnish with fresh parsley and serve immediately.

- This recipe is perfect for a quick and flavorful side dish.
- Feel free to adjust the sweetness by adding more or less honey.
