Description

These honey glazed carrots are a delicious side dish that are easy to prepare in the Instant Pot.


Ingredients

  • 1 pound carrots, peeled and cut into 1-inch pieces
  • 1/4 cup vegetable broth
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Place the carrots and vegetable broth in the Instant Pot.
  2. Secure the lid and set the valve to sealing.
  3. Cook on high pressure for 3 minutes.
  4. Quick-release the pressure.
  5. Carefully open the lid.
  6. Drain any remaining liquid from the Instant Pot.
  7. Add the butter, honey, brown sugar, cinnamon, salt, and pepper to the Instant Pot.
  8. Stir gently to coat the carrots with the glaze.
  9. Turn on the sauté function and cook for 2-3 minutes, or until the glaze has thickened and is glossy, stirring occasionally.
  10. Transfer the carrots to a serving dish.
  11. Garnish with fresh parsley and serve immediately.
