Instructions
- Peel the sweet potatoes and grate them using a box grater or food processor.
- Transfer the grated sweet potatoes to a clean kitchen towel or paper towel. Squeeze out excess moisture to help achieve crispiness.
- In a large bowl, mix the grated sweet potatoes with the grated onion (if using), olive oil, garlic powder, paprika, salt, and black pepper. Stir until well combined.
- Preheat a large skillet over medium heat and add a tablespoon of oil, ensuring it coats the bottom evenly.
- Take a handful of the sweet potato mixture and form it into a patty. Repeat with the remaining mixture.
- Place the patties in the skillet, ensuring not to overcrowd. Cook for 4-5 minutes on one side until golden brown.
- Carefully flip each patty and cook for another 4-5 minutes on the other side until crispy and golden brown.
- Once cooked, transfer the hash browns to a plate lined with paper towels to absorb excess oil.
- Sprinkle with fresh herbs, if desired, for an added burst of flavor.
