Description

Delicious and fluffy chocolate chip muffins made with wholesome ingredients.


Ingredients

Scale
  • 2 cups white whole wheat flour (spooned and leveled)
  • 1/2 teaspoon fine salt
  • 1 tablespoon baking powder
  • 1/4 cup coconut sugar (or dark brown sugar)
  • 1/3 cup maple syrup
  • 1 cup whole soy milk or other dairy free milk alternative (whole milk works well too)
  • 1/2 cup coconut oil (melted)
  • 1 tablespoon vanilla extract
  • 1 large egg (at room temperature)
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 400 degrees F. Line a 12-count muffin tin with paper liners.
  2. In a large bowl, mix the whole wheat flour, baking powder, and salt.
  3. In a separate bowl, whisk together the brown sugar, maple syrup, milk, melted coconut oil, vanilla, and egg.
  4. Add the liquid ingredients to the dry ingredients and whisk until just combined. Be careful not to overmix.
  5. Fold in the chocolate chips.
  6. Divide the batter among the muffin cups.
  7. Bake in the center rack of the oven for 18-21 minutes.
  8. Allow the muffins to cool completely on a wire rack and enjoy!
