Description

Instructions

  1. Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining with paper liners or greasing it.
  2. In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, and salt until well mixed.
  3. In another bowl, mix the Greek yogurt, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  5. Gently fold in the semi-sweet chocolate chips to distribute them evenly throughout the batter.
  6. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full to allow for rising.
  7. Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Once baked, remove the muffins from the oven and let them cool in the pan for about 10 minutes.
