Instructions
- Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining with paper liners or greasing it.
- In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, and salt until well mixed.
- In another bowl, mix the Greek yogurt, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the semi-sweet chocolate chips to distribute them evenly throughout the batter.
- Pour the batter into the prepared muffin tin, filling each cup about two-thirds full to allow for rising.
- Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
- Once baked, remove the muffins from the oven and let them cool in the pan for about 10 minutes.
- Carefully take the muffins out of the tin and transfer them to a wire rack to cool completely.
- Once cooled, serve them as a delightful snack or breakfast option.
