Description

This creamy chicken fettuccine is a quick and delicious meal that is perfect for any night of the week.


Ingredients

  • 2 large chicken breasts, diced
  • 12 oz (340g) fettuccine or spaghetti
  • 4 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1 cup (100g) freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season the diced chicken breasts with salt and black pepper. In a large skillet, heat olive oil over medium-high heat, then add the chicken. Cook until golden brown and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, reduce heat to medium and melt the butter. Add minced garlic and sauté for 1 minute until fragrant.
  4. Stir in heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese and whisk until the sauce is smooth and slightly thickened, about 2-3 minutes.
  5. Add the cooked pasta and chicken to the skillet. Toss well to coat with the sauce. Garnish with chopped parsley if desired and serve warm.
