Delicious whole-grain English muffins layered with fluffy egg patties, cheese, avocado, and fresh spinach.
Ingredients

- 4 large eggs
- 2 tablespoons milk (any kind)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- 4 whole-grain English muffins, split and toasted
- 4 slices cheddar cheese (or your favorite cheese)
- 1 large avocado, sliced
- 1 cup fresh baby spinach
- 1 tablespoon butter or olive oil
- Salt and pepper to taste
Instructions
- In a medium bowl, whisk together eggs, milk, salt, pepper, and garlic powder until well combined.
- Heat a non-stick skillet over medium heat and lightly coat with butter or olive oil.
- Pour about 1/4 cup of the egg mixture into the skillet to form a small, round patty. Cook for 2-3 minutes until set, then flip and cook for another 1-2 minutes until golden. Repeat to make 4 patties.
- Lightly toast the English muffins until golden.
- Layer each bottom muffin half with a slice of cheese, an egg patty, avocado slices, and a handful of fresh spinach.
- Season with a pinch of salt and pepper if desired, then top with the other muffin half.
- Serve immediately, or wrap in foil to keep warm if making ahead.
