Delicious and easy slow cooker chicken fajitas.
Ingredients

- 1 lb chicken breasts
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can (14 oz) diced tomatoes
- 1 packet fajita seasoning
- 8 small tortillas
- 1 cup shredded cheese
Instructions
- Place chicken breasts in the slow cooker.
- Add sliced bell pepper and onion on top of the chicken.
- Pour diced tomatoes over the vegetables.
- Sprinkle fajita seasoning evenly over the mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks.
- Serve in tortillas and top with cheese.
Notes
- Feel free to add additional toppings such as sour cream or guacamole.
- This recipe can be easily doubled for a larger crowd.
