- 1 cup full-fat coconut milk
- 2 shots espresso or 1 cup strong brewed coffee
- 2 tbsp maple syrup (adjust to taste)
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
Instructions
- Brew espresso or strong coffee and set aside.
- In a saucepan over medium heat, whisk together pumpkin puree, coconut milk, maple syrup, cinnamon, nutmeg, and ginger until warm but not boiling.
- For a frothy texture, blend the mixture on high for 30 seconds; otherwise, stir well.
- Pour hot coffee into a mug and add the pumpkin-coconut mixture on top.
- Garnish with a sprinkle of cinnamon or nutmeg and whipped coconut cream if desired.
