Description

A delicious and healthy chia seed pudding layered with sautéed apples and topped with granola.

Ingredients

Scale
  • 1/2 cup chia seeds
  • 2 cups almond milk (or preferred milk)
  • 2 medium fresh apples (Granny Smith or Honeycrisp), peeled and diced
  • 1 tsp ground cinnamon
  • 3 tbsp maple syrup (adjust to taste)
  • 1/4 cup granola (for topping)

Instructions

  1. In a mixing bowl, combine chia seeds and almond milk. Stir until smooth, then let sit for 10 minutes to thicken.
  2. While the pudding thickens, heat a skillet over medium heat. Add diced apples, cinnamon, and maple syrup. Cook until apples soften and become fragrant.
  3. Layer the chia pudding and apple mixture in serving glasses or bowls until filled.
  4. Top with granola and drizzle with extra maple syrup if desired.
  5. Serve immediately or chill in the fridge before enjoying.

Notes

  • For a sweeter pudding, adjust the amount of maple syrup to taste.
