A delicious and healthy chia seed pudding layered with sautéed apples and topped with granola.
Ingredients

- 1/2 cup chia seeds
- 2 cups almond milk (or preferred milk)
- 2 medium fresh apples (Granny Smith or Honeycrisp), peeled and diced
- 1 tsp ground cinnamon
- 3 tbsp maple syrup (adjust to taste)
- 1/4 cup granola (for topping)
Instructions
- In a mixing bowl, combine chia seeds and almond milk. Stir until smooth, then let sit for 10 minutes to thicken.
- While the pudding thickens, heat a skillet over medium heat. Add diced apples, cinnamon, and maple syrup. Cook until apples soften and become fragrant.
- Layer the chia pudding and apple mixture in serving glasses or bowls until filled.
- Top with granola and drizzle with extra maple syrup if desired.
- Serve immediately or chill in the fridge before enjoying.
Notes
- For a sweeter pudding, adjust the amount of maple syrup to taste.
