- 6 medium potatoes, thinly sliced
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup chicken broth

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- ½ teaspoon paprika
- 2 tablespoons fresh chives, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, garlic powder, and onion powder.
- Heat olive oil in a skillet over medium-high heat; sear the chicken for 3-4 minutes on each side until golden brown.
- In a greased baking dish, layer thinly sliced potatoes at the bottom and lightly season.
- Place seared chicken over the potatoes.
- Mix sour cream, chicken broth, thyme, and paprika in a bowl; pour over the dish.
- Top with shredded cheddar cheese and cover with foil.
- Bake for 30 minutes covered; then remove foil and bake an additional 15-20 minutes until bubbly.
