Key Ingredients for Firecracker Chicken
Firecracker Chicken is all about bold flavors and a satisfying crunch that makes each bite a delightful experience. Here’s a closer look at the key ingredients that create this vibrant dish.
Chicken: I prefer using boneless, skinless chicken thighs for their juiciness and rich flavor. Thighs are more forgiving than breasts and won’t dry out during cooking.
Cornstarch: This ingredient is key to achieving that coveted crispy coating. Drenching the chicken in cornstarch creates a lovely texture that contrasts beautifully with the spicy sauce.
Hot Sauce: The star of the show! A good quality hot sauce adds the right kick to the dish. Feel free to adjust the amount based on your heat preference—discovering your ideal balance is part of the fun.
Soy Sauce: This salty addition deepens the flavor profile. It enhances the umami qualities that make this Firecracker Chicken irresistible.
Green Onions: These provide a fresh crunch and a pop of color, making them a perfect garnish. Plus, they add a bit of zing that complements the spicy notes perfectly.
With these ingredients on hand, you’re set to whip up a delightful and fiery dish that impresses every time!

Cooking Tips and Notes for Firecracker Chicken
Creating the perfect Firecracker Chicken experience is about more than just following a recipe; it’s about infusing your passion for cooking into each step. When I first whipped up this dish, the thrilling spices tossing in the pan felt like a spark igniting culinary excitement in my kitchen. Here are some helpful tips to ensure your Firecracker Chicken is a showstopper.
Use Fresh Ingredients
Opt for fresh, high-quality chicken and vegetables. Fresh chicken tends to have a better texture and flavor. If you can, choose organic options to elevate the dish even further.
Marination is Key
Allow your chicken to marinate for at least 30 minutes, or preferably overnight, to let the flavors meld and deepen. A longer marination time translates to more thrilling taste in every bite.
Adjust the Heat
The “firecracker” element comes from the spicy sauce. If you aren’t a fan of intense heat, consider dialing back on the cayenne pepper or mixing in more sweet elements like honey or brown sugar to balance the flavors.
Stir-Fry for Texture
When cooking, keep the chicken pieces moving in the pan. This helps them brown evenly and achieve that tender-crisp quality that makes Firecracker Chicken so irresistible.
Serve with Care
Pair your dish with steamed rice or a fresh salad to complement the robust flavors. A sprinkle of sesame seeds or sliced green onions makes for a beautiful finishing touch.
By following these tips, you’re not just cooking a meal; you’re crafting a culinary adventure!

- 1 tbsp oil
- 1 medium white onion (peeled and sliced into wedges)
- 1 red bell pepper (seeds removed, chopped into chunks)
- 1 green bell pepper (seeds removed, chopped into chunks)
- 85 g (1 cup) mangetout (snow peas)
- 12 dried arbol chillies
- small bunch of spring onions (scallions, chopped)
- splash of water (optional)
- boiled long grain rice
- 1 1/2 tsp shichimi powder
- 1 tsp black sesame seeds
- 1 tsp white sesame seeds
- wedges of lime
Instructions
- Place all of the marinade ingredients into a large bowl and mix together.
- Add one third of the marinade to the chicken, then cover with cling film and marinade for at least an hour (or up to overnight).
- Cook your rice as per the pack instructions.
- Whilst the rice is cooking, heat the oil on a high heat in a wok or large frying pan/skillet until hot. Scoop the chicken out of the marinade with a slotted spoon and cook in the wok until slightly browned, and almost cooked right through.
- Add in the chopped onion and cook for a further 2 minutes to soften it slightly.
- Add in the reserved marinade and heat through whilst stirring until bubbling throughout.
- Add in the peppers, mangetout and dried chillies. Cook for 1 minute, then stir through the spring onions. Add a splash of water if needed to loosen the sauce.
- Check one of the larger pieces of chicken to ensure it’s cooked in the middle. Then turn off the heat.
- Take your boiled rice and spoon it into a small lightly oiled bowl. Push it down firmly with the back of a spoon, then place a serving plate on top and turn the whole thing over. Tap the bowl gently to release the mound of rice. Repeat until you have four plates of rice.
- Spoon the firecracker chicken around the rice and sprinkle the top of the rice with shichimi powder and sesame seeds.
- Top the rice with a wedge of lime and serve!
Notes
- You can use Tianjin Chilies if you can’t find arbol chillies.
- Adjust the amount of chilli sauce to control the heat level.
